This online learning course is designed to prepare school professionals (Health, PE, FACS teachers, Nurses, Counselors, and Food Service Providers) to demonstrate knowledge of nutrition and food education concepts and skills identified in the National Health Education Standards, in Vermont’s Health Education Guidelines.

As the need to address student nutrition has come into focus, a comprehensive approach to changing nutrition behaviors must include facilitating development of nutrition related health literacy among youth. This course is designed for professionals to learn how to teach nutrition education while working collaboratively across school and local communities to establish healthful, sustainable, food systems for schools.

Upon successful completion of this course, students will have:
· explored nutrition concepts, nutrient needs, Dietary Guidelines for Americans, and common nutrition problems of children and adults.
· discussed the health benefits of physical activity, connection between physical activity and academic performance, factors influencing participation in physical activity, and strategies for collaborating with colleagues to promote physical activity.
· collected and analyzed data to plan relevant school health instruction and programs that meet the diverse needs of all learners and the community.
· constructed measurable, developmentally appropriate, performance-based objectives that are aligned with national standards.

  • This is a 3 credit graduate level course, with credits from Castleton University.
Randall, Erin

Erin is an instructor for the VT-HEC Health Educator program. She has taught Health Education at South Burlington High School for 15 years. In addition to teaching Health at SBHS, Erin oversees the school’s garden, and teaches Sustainable Foods, Contemporary Health Issues in Fiction, and Peer Leadership classes. Erin has a Master of Arts in Teaching from UVM, and an undergraduate degree in Dietetics and Nutritional Education. In addition to working with teachers to incorporate nutrition education in their classrooms, Erin is also passionate about incorporating mindfulness education into classrooms everywhere.
